Curious, want to deepen your culinary knowledge? Here we tell you all about a substance that is getting people talking: gelatin, more precisely halal gelatin.

It has its place in our store Aid Mubarak, and will also, without a doubt, have its place in your home!

Halal gelatin: a presentation’imposes

Food gelatin is a food aid that has no odor or color. This food gelling agent is known to be used in pastry to set liquid preparations.

When you hear gelatin, you automatically think: flan, jelly, candies ? Yes, it gels foods, but not only that!

Gelatin has many properties, it is also used to:

  • Thicken a liquid preparation;
  • Stabiliser les mousses, afin qu’elles restent intactes même après des heures ;
  • Finally, give texture, emulsify.

But why should gelatin be halal? First of all, you need to know where this substance comes from. Gelatin is extracted from two sources: animal or plant.

On the plant side, there is l’agar-agar and the pectin.

On the animal side, there is that of fish, but the best known are the beef or pork gelatins. And, unfortunately, they are the most used in the food industry. In particular so-called “porcine” gelatin, which, as its name suggests, comes from pork.

From these elements, we understand that to be able to consume it, it must be halal. As with everything of animal origin.

Why choose halal gelatin?

First, let's approach the subject from a religious angle, using this question posed to the Ifta Scholars Committee:

  • Question: Is gelatin haram?
  • The standing committee of the’ifta replied: “If this gelatin is produced from’a forbidden animal, like the pig, it is therefore prohibited. Allah said:

حُرِّمَتْ عَلَيْكُمُ الْمَيْتَةُ وَالدَّمُ وَلَحْمُ الْخِنزير

“An animal found dead, blood, and pork flesh are forbidden to you,” and scholars are unanimous on the fact that pork fat is concerned by this prohibition. On the other hand, if this gelatin is produced from’something authorized, and not prohibited, then it’there is no harm.» (Fatwa n°8039)

After reading what is cited above, it will be clear that porcine gelatin is completely excluded. Therefore, foods containing it are not sent to us.

So let's come back to our question: why choose halal gelatin?

Animal gelatin is the most effective and recommended for making pastries. So, by elimination, there remains within our reach that of beef. But not extracted from just any animal! In fact, d’an animal having been sacrificed in a legislated manner. This is why choosing halal gelatin is a religiously logical choice. And on the other hand, practical, taste-wise.

In the kitchen, halal gelatin will allow you to hold your desserts, or even panacotta, for example. Cakes with frosting and more are yours!

You will be able to prepare: ice cream, homemade sorbet, chocolate mousse, the list goes on.

On the other hand, gelatin is also useful for your savory dishes.

The advantages of choosing halal gelatin

Gelatin is the gelling agent most appreciated by chefs, and we understand why!

When compared to vegetable gelatins, halal gelatin is the easiest to use and store.

Let's take for example l’agar-agar. Certainly, its gelling power is very powerful, but its action is only obtained by heating it from 80 degrees. While the gelatin powder is incorporated directly. And the halal gelatin sheets, they just have to be soaked in cold water for a few minutes, and added to the preparation.

Also, it is not recommended to freeze a recipe made with agar-agar, as it could lose its consistency. Or even make a creation based on citrus fruits, because the acidity cancels the effect of the agar agar.

Gelatin, for its part, is thermoreversible. Which means that it can be heated several times without losing its qualities. And it supports freezing.

Halal gelatin is therefore versatile, and will adapt to your most gourmet recipes!

Recommended dosages

First of all, it is necessary to understand that edible gelatin has its own degree of measurement: the bloom.

The bloom rate starts from 50, going up to 300.

The higher the rate, the stronger the gelling power. However, this rate has no link with the quality of the substance. This information is only for knowing how to work it properly!

Color code to know to get started with gelatin:

  • Gold: 200 blooms
  • Silver: 180 blooms
  • Bronze: 160 blooms

Finally, depending on what texture we are looking for, the dosage will not be the same, here are some examples:

  • For ice creams and sorbets, allow 2 to 3 g;
  • 4 to 8 g for an emulsifying effect;
  • 10 to 12 g for your toppings, jellies;
  • For a mousse, 12 to 16 g will be necessary.

The golden rule is to have an accurate scale! Then, not to be heavy-handed, at the risk of ending up with too rigid a preparation.
